Our Top 4 rezemo Summer Recipes

These four rezemo summer recipes will sweeten your everyday life. Whether ice-cold coffee specialties or vegan cakes - we have tried all the recipes as a team and are amazed at how well you can pamper yourself with great treats. With that in mind, we hope you enjoy trying them out!

Recipe 1: Vegan Espresso Brownies

To help you reach vegan brownie heaven, we recommend this great recipe from the vegan food blog Zucker & Jagdwurst .

Ingredients:

  • 200 g flour,
  • 130 g sugar,
  • 50 g cocoa powder,
  • 100 g banana,
  • 200 g dark chocolate or couverture,
  • 100 ml vegetable oil,
  • 2 cups of freshly brewed rezemo Espresso Edition 4 or Edition 1 ,
  • a compatible Nespresso machine and
  • 100 g walnuts.

For the glaze you need:

Directions:

  1. To begin, brew your preferred rezemo Epresso Edition 4 or Edition 1 with a compatible Nespresso machine and let it cool down. While you heat your oven to 180 degrees circulating air, you can mix the flour, sugar and cocoa powder.
  2. Next, melt the dark chocolate in hot water and mash the banana into a paste. You can also chop the walnuts. Mix the melted chocolate, banana paste, oil and espresso with the ingredients from step 1. Then add the walnuts and mix everything into a smooth mixture.
  3. Before you can put the dough into the pan and smooth it out, you should grease your cake pan with vegetable margarine or oil and dust it with cocoa powder. Now you have to wait for about 25 minutes until the cake is finished baking at 180 degrees Celsius.
  4. While the dough is baking, you can mix powdered sugar, cocoa powder and espresso to make a glaze.
  5. Once your cake is baked and has cooled slightly, you can pour the icing over the brownies according to your taste.
  6. Finally, you can enjoy the espresso brownies alone or with your loved ones!

Recipe 2: Homemade Frappuccino

So that you can treat yourself to this sweet treat to enjoy ice cold.

Ingredients:

  • 10 ice cubes,
  • a stand mixer,
  • 2 rezemo coffee capsules of the rezemo Espresso Edition 4 or Edition 1 ,
  • a compatible Nespresso machine,
  • 240 ml milk of your choice,
  • 1 teaspoon vanilla extract,
  • 2-3 teaspoons of powdered sugar,
  • Optional: whipped cream and chocolate or caramel sauce.

Directions:

  1. First of all, brew 2 capsules of rezemo Espresso Edition 4 or Edition 1 as espresso using the Nespresso machine, so that you get about 60ml. Then put the ice cubes, the powdered sugar and the vanilla extract together with the espresso into the blender.
  2. After you have mixed all the ingredients in the blender, your Frappuccino should have a creamy, airy consistency. Optionally, you can spray cream on your Frappuccino. But for that extra something, we recommend pouring chocolate or caramel sauce over the cream.

Your delicious Frappuccino is ready for on the go or at home.

Recipe 3: Fresh, vegan carrot cake for coffee

How about vegan coffee and cake? All you need is this recipe from the vegan food blog Zucker & Jagdwurst .

Ingredients:

  • 225 g flour,
  • 150 g sugar,
  • 8 g vanilla sugar,
  • 15 g baking powder,
  • 0.5 tsp grated nutmeg,
  • 1 teaspoon cinnamon,
  • 50 g roasted and chopped hazelnuts,
  • 80 g fresh carrots,
  • 250 ml sparkling water,
  • 50 ml vegetable oil,
  • 1 tablespoon vegetable butter,
  • 2 tablespoons flour.

For the frosting you need:

  • 100 g vegetable butter,
  • 150-250 g powdered sugar,
  • 150 g plant-based cream cheese,
  • 3 tablespoons lime juice.

Directions:

  1. First, start by chopping the hazelnuts. Then put the flour, sugar, vanilla sugar, baking powder, grated nutmeg, cinnamon and chopped hazelnuts in a bowl. Preheat the oven to 180 degrees.
  2. Next, wash the carrots (about 4), peel and grate them until you have about 80 g. Add these to the ingredients in the bowl and mix everything together.
  3. Then add the oil and sparkling water and mix into a smooth dough.
  4. Grease your cake tin with vegetable butter or oil and dust the tin with flour so that you can fill the tin with the dough and bake it on a medium heat for one hour.
  5. While you are baking the cake, you can prepare the frosting. First, beat the vegan butter with a mixer and gradually add the powdered sugar.
  6. This step depends on your sensitivity. Beforehand, pour the lime juice into the vegan butter from step 5. The more powdered sugar you add when stirring, the fluffier the consistency will be.
  7. You should refrigerate both the frosting and the cake and let them cool down. You can then spread the frosting generously on the cake and the chopped hazelnuts over the frosting. It is also a good idea to sprinkle leftover chopped carrots on the frosting.
  8. Finally, coffee is a must with carrot cake! That's why we recommend the rezemo coffee Edition 5 with a plant-based milk alternative, which you can enjoy alone or with your loved ones.

Recipe 4: The favorite for summer - Espresso Tonic

Although Espresso (Gin) Tonic may sound strange, it will surprise you and provide a refreshing taste experience.

Ingredients:

  • at least 5 ice cubes,
  • 150 ml of tonic water of your favorite brand,
  • 1 rezemo coffee capsule of the rezemo Espresso Edition 4 or Edition 1 ,
  • and a compatible Nespresso machine.
  • Optional: Gin.

Directions:

  1. For your espresso tonic, fill your glass with any amount of ice cubes for a fresh and cool taste. Then add 150 ml of tonic water.
  2. If you want to drink gin with your espresso tonic, you should add it next, before the espresso is brewed.
  3. You can then brew the rezemo Espresso Edition 4 as a coffee capsule directly into your glass using the Nespresso machine and pour it over the ice cubes. Your ice-cold espresso tonic is ready, perfect as a refreshment on a hot summer day.
